Infused No-Bake Pumpkin Cheese Cake Recipe

SERVES: 10 (20MG THC PER SERVING)
1-10-inch store-bought graham cracker crust
1 cup (240ml) infused cold heavy cream**
16 ounces (452g) full-fat brick cream cheese, softened to room temperature
1 cup (227g) pumpkin puree
314 cup (90g) confectioners’ sugar
1/4 cup (50g) packed light or dark brown sugar
1 teaspoon pure vanilla extract
2 teaspoons pumpkin pie spice
1/2 teaspoon ground cinnamon
1/8 teaspoon salt

INSTRUCTIONS

1. ** Infuse Cream: Break a part 1 gram cannabis flower and heat on baking sheet in oven at 240 F for 20 minutes.
Add decarbed flower to 1¼ cup heavy cream in small pot. Heat on low for 30 minutes, covered. Do not boil and stir occasionally.

Strain and completely cool the heavy cream.

2. Make the filling: Using a hand mixer, whip the cold heavy cream into stiff peaks on medium-high speed, about 4 minutes. Set aside.

3. Using a hand mixer, beat the cream cheese on medium until smooth and creamy.

4. Add the pumpkin, confectioners’ sugar, and brown sugar and beat on medium-high speed until combined. Add the vanilla extract, pumpkin pie spice, cinnamon, and salt and beat until combined, creamy, and smooth with no noticeable lumps. Using a spatula, fold the whipped cream into the cheesecake filling until combined.

5. Pour filling into a prepared graham cracker crust. Cover with foil and refrigerate for at least 8 hours or overnight. Cut into 10 slices and serve with additional whip cream.
